My beautiful Bride, Rachel, discovered an awesome pasta dish called Cavatini – I am not sure where the name comes from, and I have seen it used to refer to several different pasta dishes in Italy.  This dish is easy to prepare, very satisfying and, with bubbling cheeses and 3 types of meat, the dish is quite impressive to serve to guests.

1lb Ground Italian Sausage
1lb Ground Beef
Salt & Pepper to Taste
26 oz + 16 oz Spaghetti sauce
3 C. Farfalle (bowtie) pasta cooked al dente
3 C. Shredded Mozzarella
3 oz Pkg Pepperoni (divide in half)

In a large skillet brown sausage and ground beef with salt and pepper, drain.
In an ungreased 13×9 baking dish, layer half the spaghetti sauce, meat, pasta, cheese and pepperoni, repeat layers. Bake at 350 degrees for 45 minutes.

Any of a number of ingredients can be added to the layers: green peppers, sweet red peppers, mushrooms, onions, garlic – any of these items may add excellent textures and flavors to the dish.As always, experiment, play around, switch up the pasta types or meats – like our buddy Emeril always says, "Folks, we ain't building Rocket Ships here!".
