After a long trip to Northern VA and back yesterday for our Niece's birthday today is a lazy, sleep-in, brunch kind of Sunday.  Comfort food is definitely called for.  Rachel made baked outmeal a few months ago, but we cant find the recipe – so a quick search of the 'net showed several interesting recipes which we tweaked and came up with the following.  Baked Oatmeal is really a nice, warm-belly kind of food – definitely something a ChowBelly would love! 

Baked Irish Oatmeal

2 eggs
1 C. milk
1/3 C. vegetable oil
3/4 c brown sugar
2 tsp baking powder
1 tsp salt
3 C. Oatmeal
1 tsp cinnamon 

Pre-heat oven to 350 degrees. Beat the eggs, then add milk, oil, brown sugar, baking powder, and salt, mix. Stir in the remaining ingredients and pour into a greased 9×9 pan. Bake for about 25 minutes until nicely browned. Serve warm with milk.

Variations: Feel free to add pecans, walnuts, raisins, chopped apples, figs, prunes – just about anything can be added to personalize this dish to make it a family favorite!
