McDonald’s gets a bum rap for their fat-food fare, but let’s all be honest. They serve what we want. Now we are asking for something different and they are responding – salads, low-fat wraps, grilled chicken sandwiches, non-fat dairy desserts – these are some of the healthy options – what else are we asking for? High-sugar, high-fat, high-calorie blended coffee drinks! Maybe this is only two steps forward and one step back?

I am a HUGE fan of the McDonald’s Asisan Chicken Salad. Edamame, mandarin oranges, a nice chicken breast and mixed greens? Perfect fast food that’s healthy. Order the chicken grilled, not fried, and ask for “light” or better yet “no” sugary and sodium-laden sauce on the chicken. Even with the seasame dressing and almonds, the whole salad is quite filling and less than 350 calories! Can I get paid for a McDonald’s endorsement now?

I find this to be a result of what I call the restaurant trickle down. For instance, Thomas Keller buts balsamic syrup/reduction in his French Laundry cookbook. It is ground breaking, delicious, and yet while fairly easy to make, requires some finesse. Now i have food purveyors trying to sell me balsamic syrup. It’s loaded with sugar and xantham gum .Keller’s is just straight balsamic reduced slowly for hours. So while McDonald’s is trying to offer lighter fair, it all comes from the trickle down from high end restaurants 15-20 years behind. And of course highly modified. I don’t want to stand on a pedestal because through out my life I have eaten my share of McDonald’s. But I have stayed away for the past 5 years. I find it sad that people no longer cook but of course, that’s why I have a job. On the positive, I hope people will look towards the healthier options and while it is a good thing McDonald’s offers it, i believe most people will stick to the quarter pounder/Big Mac and fries.
